When January arrives and winter locks down the fields, the pace of the farm turns inward. The outdoor gardens rest under heavy frost while we pivot entirely to workshop crafts and the processing of winter provisions. This is the season of rest, reflection, and looking out to the new year. While our perennials are hibernating through the chill, it is already time to start our annuals: herbs, alliums, and the first of our vegetables that will be ready at the end of February and early March for anyone else who is getting restless about seeing sign of spring.
